"Naadan Kozhi Porichathu" Coastal Indian Chicken Nuggets

A Coastal Indian Version of Chicken Nuggets coated with coconut & curry leaves; flavored with peppercorns and aniseeds.
(Specially curated for kids who are big foodies and love the flavours from the spice coast of India)
INGREDIENTS:-
1. CHICKEN BREAST- BONELESS = 500 gms
2. GINGER/GARLIC PASTE= 1 Tbsp
3. KASHMIRI RED CHILI PASTE= 1 Tbsp
4. SALT= 2 TSP
5. TURMERIC= ½ tsp
6. CORIANDER POWDER= 1 tbsp
7. SAUNF= 1 Tsp1/2
8. CRUSHED PEPPERCORNS- ½ Tsp
9. LIME JUICE= 1 Tbsp
10. YOGHURT= 1 Tbsp
11. CURRY LEAVES= A HANDFUL
12. COCONUT GRATED= ½ COCONUT
13. BESAN (GRAM FLOUR)= 2 Tbsp
14. RICE FLOUR= 2 TBSP
15. CORNFLOUR= 2 Tsp
16. CANOLA OIL- 300 ml to shallow fry
METHOD:-
1. Take the chicken breast pieces, wrap it in a cling film and flatten it with a steak hammer until ½ inch thick. This will partly tenderize the meat.
2. Cut into 2-inch cubes, and marinate with salt, turmeric, ginger-garlic paste, the Lime juice, yoghurt and coriander powder and set aside for 1 hour.
3. Deep fry the curry leaves and crush them in a mortar/pestle or with your hands.
4. Add the crushed curry leaves and grated coconut to the marinated chicken
5. Now sprinkle the besan flour, rice flour and corn-flour evenly on the chicken and mix with your hands/with a spatula.
6. Sprinkle a little water just to ensure the spices are evenly coating the chicken.
7. Shallow fry in Oil.
