Baking Mad Monday: West Indies Chocolate Tart

Inspired by my cruise to Grenada, today I'm baking onboard Ventura to meet the P & O Cruise team and bake my West indies Chocolate Tart in Atul Kochhar's East Restaurant.
For the sweet chocolate pastry:
150g butter cut in small cubes
6 tbsp sifted icing sugar
2 egg yolk
200g plain flour
2 tbsp cocoa powder
2 tbsp water
To make the pastry:
Rub the butter, flour, cocoa and icing sugar into a bowl using your finger tips until you get a breadcrumb effect. Make a well and add the yolks and water. Combine together and wrap in cling film and leave to rest in the fridge for 1h before cooking it blind for 25 minutes in a oven set to 180c.
Flavoured ganache:
300 grams of cream
50 grams of glucose syrup
200 grams of dark chocolate melted
70 grams of unsalted butter
1 vanilla paste
1 star aniseed
1 tsp ground cinnamon
½ tsp of freshly grated nut meg
Ganache:
Warm the cream, spices and the glucose together. Let it infuse for 10 minutes and then pour it over the melted chocolate using a sieve.
When the mixture is lukewarm, add the butter gently with a wooden spoon without over mixing. And fill right to the top the cool pastry flan.
Let to set at room temperature if you are going to serve it in the next few hours, if not place it in the fridge.
Serve it at room temperature for the perfect texture.
