This is the fourth video in a series that documents the processing of splitting the serosa from the small intestine of cattle for the purpose of making gut musical strings.
Once the gut ribbon comes out of the splitting machine the next task is to separate the serosa layer, (this is the layer of muscle fibers that are used in string making), from the mucosa layer. Once ten lengths of gut are available, the worker will select the serosa layer in one hand and the mucosa layer in the other hand. The gut is then pulled around some stainless steel pins set into the workbench to divide two. The serosa is saved in plastic bins in groups of 100 lengths and the mucusa is discarded.
The serosa is then taken to another facility where it will be cut into lengths for further processing and twisting.
