Ingredients:
4 ripe plantains (or yams, if preferred)
1/4 cup palm oil
1 medium onion, chopped
1/2 teaspoon ground red pepper (optional, for heat)
1 teaspoon salt (to taste)
1/2 cup roasted peanuts (optional, for garnish)
2 hard-boiled eggs (for garnish)
1/4 cup diced avocados (for garnish)
1 tablespoon green onions, chopped (for garnish)
Instructions:
Prepare the Ingredients:
Peel and cut the plantains (or yams) into chunks.
Finely chop the onion and mince the garlic.
Grate the ginger and set aside.
Boil the Plantains/Yams:
Place the plantain (or yam) chunks into a pot of water.
Add a pinch of salt and bring to a boil.
Cook until the plantains (or yams) are tender (about 10-15 minutes).
Mash the Plantains/Yams:
Drain the cooked plantains (or yams) and transfer them to a large bowl.
Use a potato masher or a fork to mash them until smooth. Set aside.
Prepare the Palm Oil Sauce:
In a large skillet, heat the palm oil over medium heat.
Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are translucent and fragrant (about 5 minutes).
If you like it spicy, add the ground red pepper at this stage and stir well.
Combine and Mix:
Add the mashed plantains (or yams) to the skillet with the palm oil mixture.
Stir continuously to ensure the plantains (or yams) are well coated with the palm oil sauce.
Add salt to taste and mix thoroughly until everything is well combined and heated through.
Serve and Garnish:
Transfer the Etor to a serving dish.
Garnish with roasted peanuts, slices of hard-boiled eggs, diced avocados, and chopped green onions.
Enjoy:
Your delicious Etor is ready to be enjoyed! Serve it warm as a main dish or a side dish.
Tips:
For a vegan version, omit the hard-boiled eggs.
You can adjust the spiciness by adding more or less ground red pepper.
Adding roasted peanuts gives the dish a nice crunch and additional flavor.
