Chicken Rice "Good Friend" Recipe
Serves 4-6
Ingredients
1/2 Cup Olive Oil
4-6 chicken thighs, bone in and skin on
1 t Salt
1/2 t Pepper
1 yellow onion, diced (my mom used pearl onions)
2 cloves garlic, minced
2.5 cups rice
1 cup dry white wine
1 pinch saffron
4 cups chicken stock
1 t oregano
3/4 cup Spanish Queen Green Olives, chopped
Parsley, minced for garnish (optional)
Directions
Preheat the oven to 350°F.
Stir saffron into the chicken broth and set aside.
Heat olive oil in a large ovenproof pan over medium-high heat.
Season chicken with salt and pepper, then sear skin-side down for 4–5 minutes until browned. Flip and cook for another 3–4 minutes. (It doesn’t need to be fully cooked.)
Move the chicken to the side or a plate.
Add onions and cook for 3–4 minutes until softened. Stir in garlic and cook for 2–3 minutes until golden.
Add rice and toast for 1 minute, then pour in wine and stir until absorbed.
Pour in 3 cups of saffron-infused broth, add green olives, and return the chicken to the pan, skin-side up.
Cover and bake for 45–50 minutes.
Sprinkle with oregano or parsley. If needed, add the remaining cup of broth to prevent drying.
Serve hot with a tossed green salad.
