Traditional dosai has to be made through a process of fermentation. Palm toddy (wine) is added to the dosai batter for fermenting, or it’s left out in the sun for it to ferment naturally. This is the usual process of making dosai in Sri Lanka. However, in western countries this process is completed by using yeast instead of palm toddy or sun exposure.
