It sounds like an oxymoron, but this is a great way to get the best of both worlds. Keep your fermenter open so the yeast can impart a full flavour, and then seal up to carbonate. This way the beer has a bolder flavour and is ready to drink faster.

Biscuit malt 250g
Fuggles 40g @ 60min
Cascade 38g @ FO
Fuggles 18g @ FO
