What can speak more “modernist” or “molecular cuisine” than an airy culinary foam? And, I’ve already published quite a few videos on this subject. But, this one is different. In this video, I am going to test 3 most commonly accessible culinary tools with which you can make foam. And, those tools are: a Culinary Siphon, a milk frother / Aerolatte and an aquarium tank bubbler.
For the sake of this comparison, I am going to use the same stabilizer / foaming agent (Soy Lecithin) with all 3 tools. And, we will see which one makes the prettiest bubbles in the shortest period of time, that last the longest.
