Masala Peanuts
1/2 cup roasted peanuts, skinned removed
1/4 teaspoon oil
1/8th teaspoon garam masala
1/8th teaspoon amchur
1/16 to 1/8th teaspoon salt
1/4th teaspoon red pepper
1/16th teaspoon black pepper optional
1/8th teaspoon turmeric
If you don’t have roasted peanuts with skin removed, then heat raw peanuts in a pan for few minutes until the skin starts to fall off. Let them cool and rub them between your palms to remove the skin. Use a strainer with large gaps to discard the skin.

Fried Idli
75 gram dates (3-4 large dates), pit and fivers that come off easily removed
1.5 teaspoon tamarind concentrate
2 cup of water
1 teaspoon oil
2 whole red chillies
20 curry leaves
1/2 tablespoon garlic, finely grated
2 tablespoon sambhar powder
1/4 teaspoon Salt,to taste
1/4 teaspoon Red pepper, to taste
1/8 cup masala peanuts, roughly chopped
Note: If you are using dried tamarind, then please soak it in water and pressure cook for 1 whistle. You can use this water if excess to cook the dates in little water at a time by pressing them down.
In a pan, using little water at a time cook the dates first and then add 1 tablespoon of tamarind concentrate, salt, red pepper. Let this cook couple minutes and then taste it. I used about 2 tablespoon of tamarind concentrate and 1 cup of water in cooking this mixture. Let this cool completely and then blend. I had 3/4 cup of date tamarind mixture. Strain this chutney through a large sieve if necessary. I difnt have to strain it and I didn’t use any sugar. It should taste sweet from dates and slight tangy from tamarind..
In a nonstick pot, use 1/2 teaspoon of oil and fry the sliced idlis that are lightly coated with corn starch.
In the same pan, add 1 teaspoon of oil, whole chillies, curry leaves, grated garlic and sambhar powder. Let this cook for 2 to 3 minutes. Remove from heat if the pan is too hot. Add little oil if needed. Add blended mixture and let that cook for 2 3 mins. Add 1/8 cup water and let this cook. Add salt and red pepper powder. Cook for 2 minutes and taste. Add more water to adjust consistency. Chutney will thicken as it cools down. Add roughly chopped masala peanuts. It’s ready to be enjoyed with fried idli or however you like!!
