Pastourma is one of the most flavorful and traditional types of charcuterie found in Greece and the Eastern Mediterranean. It is enjoyed by Armenians, Turks, Greeks and others around the region.
It was once made with camel meat! Now it is always made with beef and cured by air drying after rubbing it with a very aromatic spice rub. The main ingredient in this unique spice rub is called tsimeni in Greek, or fenugreek. Garlic, cumin and other spices also go into the preparation for pastourma.
You might have seen this strong-flavored treat spelled basturma, bastourma or pasturma.
In Greece it is often added to other dishes, such as beans, and is an ingredient in a famous Greek dish from Asia Minor called Pita Cesarias, a tangy phyllo pie filled with tomatoes, kaseri cheese and pastourma.
