Ingredients:
(For the meringue):
• 190 g egg whites (~5 eggs)
• 1/4 tsp salt
• 250 g sugar
• 25 g cornstarch
(For the cream):
• 250 g cream cheese
• 100 g heavy cream
• 20 g powdered sugar
(Filling):
• Any berry or fruit jam + fresh berries (you can use jam only)

Instructions:
Carefully separate the egg whites from the yolks, making sure no yolk gets into the whites.
In a tall, clean, and completely dry bowl, start whipping the egg whites with a pinch of salt. (The bowl must be perfectly clean and dry, otherwise the whites won’t whip properly.)
Once the mixture becomes foamy (like beer foam), gradually add the sugar while continuing to beat.
Whip until stiff peaks form. When the meringue becomes thick and glossy, add the cornstarch and mix for about 10 seconds just until combined.
Spread the meringue evenly onto a baking sheet lined with parchment paper (silicone-coated parchment or a silicone mat works best).
Bake in a preheated oven at 140°C (285°F) for 30 minutes.
For the cream, combine all ingredients in a bowl and whip until thick and smooth (save a little cream for decoration).
Turn the baked meringue upside down (top side down), spread the cream evenly, then add the jam and berries.
Carefully roll it up as shown in the video.
Decorate the top as desired — and enjoy!
