This easy and delicious maple oven roasted carrot recipe is sure to get even your pickiest of eaters trying their veggies. This spring side dish is easy enough for weeknights and fancy enough for your Easter or holiday buffet!

With clean and simple ingredients you have on hand, these roasted carrots are a great addition to your weeknight dinner, holiday dinner plate or even your Thanksgiving or Christmas buffet. Try them on a salad for a fall or winter flavorful vegetable addition.

Maple Roasted Carrots

Ingredients:
2lbs carrots (8-10 carrots) - Peeled, trimmed and cut into two inch pieces
1/4 cup olive oil
1tsp salt
1/2 tsp pepper
1/4 cup maple syrup
Chopped parsley (optional, but very pretty!)

Preheat oven to 425.
Prep two baking sheets with cooking spray.
Place prepared carrots in a mixing bowl and toss with olive oil, salt an pepper.
Spread out on two baking sheets and roast in oven for 18-20 minutes.
When carrots are done roasting, transfer them to one baking sheet and toss with maple syrup.
Stay nearby, and roast carrots for another 8-15 minutes (watching to make sure they do not burn.)
