Holi special gujiya is a deep-fried, crescent-shaped pastry filled with sweetened khoya (mawa), dry fruits, and coconut. The crust is made from stiff refined flour dough (maida) mixed with ghee, while the filling is roasted for a rich, aromatic flavor. It is often deep-fried until golden brown or dipped in sugar syrup.

INGREDIENTS:
For dough
1/2 kg Maida / plain flour
4-5 Tbsp Anveshan ghee
For Stuffing:
2-3 Tbsp Anveshan ghee
1/4 semolina/Suji
2 Tbsp Anveshan ghee
2 tbsp Almonds
2 Tbsp Cashew
2 Tbsp Pistachio
2 Tbsp Chironji
1/2 cup coconut powder
1 Tbsp Anveshan ghee
250 Gram Mawa
2 pinches Nutmeg
Saffron
Rose water
1/2 Tsp Cardamom powder
1/2 Cup sugar powder
