In this episode we're musing at a drink that has basil seeds suspended in it and approximate the effect at home, using the wrong ingredients and no special tools. And as we were messing about with gelling agents anyway, we're also taking a detour to make jelly pearls... Don't blame me, Wikipedia made me do it.

For more information on agar, gellan gum and various other hydrocolloids, I whole-heartedly recommend the excellent resource "Texture" by Martin Lersch - - it can be downloaded for free at https://khymos.org/recipe-collection/ and contains a lot more detail than I could reasonably have included in this episode. This document tells me, for example, that the gellan used in the store-bought basil seed drink must have been the low acyl type (as evident by its transparency). As it happens, the first recipe included in there is also a "fluid gel for beverages" and it is no doubt of higher quality than the one I made out of agar - which I happened to have on hand in my "E-number basket".
