Here’s a quick and easy recipe for how to cook this delicious and fragrant indonesian yellow rice called nasi kuning. A dish traditionally served during celebrations, it is made with turmeric giving the rice its distinctive yellow colour while aromats like garlic and lemongrass infuse each grain of rice that is also cooked in coconut milk to provide a most wonderful flavour. Nasi kuning is sometimes interchanged with nasi kunyit which is indonesian for turmeric rice.

The full recipe is below

1 cup jasmine rice, washed until water runs clear
30g grated shallot
3 cloves garlic, grated
1 stalk lemongrass, bruised
2 kaffir lime leaf
1 pandan leaf
1 tsp turmeric powder (or 15g fresh turmeric, crushed)
½ tsp salt
140ml coconut milk
250ml water
Vegetable oil
Fry shallot, garlic, lemongrass, kaffir lime leaf, and pandan leaf in some vegetable on low medium for 1-2 mins until fragrant.
Add rice, turmeric, and salt and stir until well combined.
Add coconut milk and water and stir until well combined.
Cover and cook on low heat for 15 mins.
Remove lemongrass, kaffir lime leaf, and pandan leaf from the rice before serving.
