Strawberry Rhubarb Crisp For Two | Small Batch

Описание: Strawberry Rhubarb Crisp is the perfect combination of sweet strawberries and tart rhubarb. You can easily double or triple this recipe to feed more people.

Ingredients:
2 cups rhubarb, peeled and diced into 1/4 " pieces
1 cup strawberries, sliced
1/4 cup granulated sugar
1 tsp lemon juice
1/2 tsp lemon zest
Crisp Topping:
1/4 cup light brown sugar
1/4 cup all purpose flour
1/4 cup old fashioned oats
1/4 cup graham cracker crumbs
1/4 tsp nutmeg
1/2 tsp cinnamon
2 Tbsp salted butter, cut into small pieces.
Directions:
Preheat oven to 375 degrees F.
In a bowl combine rhubarb, strawberries, granulated sugar,lemon juice and zest. Stir to coat fruit.
Put into a 3 cup, greased baking dish.
In another bowl combine crisp ingredients. Use a pastry cutter or your hands to combine until pieces of putter and smaller than a pea and it has the consistency of damp sand.
Sprinkle over the top of the fruit mixture. This makes a lot of crisp topping, don't use all of it if you don't like a lot of topping. Can also cut the measurements in half for less.
Bake for 20-30 minutes or until topping is golden brown and fruit is hot and bubbling.
Allow to sit for 5-10 minutes to cool and thicken.
Serve with ice cream
