Best Chocolate Eclairs Recipe (Homemade Eclairs Recipe)
We will make these pastries in 4 stages.
Stage 1: Making pastry cream
Stage 2: Making eclairs dough
Stage 3: Making ganache
Stage 4: Combining and decorating
Making pastry cream
Ingredients
3 cups of milk
1 small cup of sugar
2 tablespoons of flour
1 tablespoon of starch
1 egg yolk
1 tablespoon of butter
1 packet of vanilla sugar
Instructions:
Put all ingredients except butter and vanilla in a pot.
Mix all well.
Put the pot on the stove and cook until it reaches the consistency of pudding, stirring constantly.
Add butter occasionally while cooking.
Mix by adding vanilla to our cream that has the consistency of pudding.
Take your pastry cream from the stove and mix and cool occasionally.
Cover the cream with stretch film so that the cream does not crust.
Put the cream in the refrigerator and cool well.
Take the cream from the fridge after it cooled, whip it with a mixer. (Not too much. It shouldn't be chirpy)
Fill then the cream in a squeezing bag and keep it in the refrigerator until we need it.
Making Eclairs Dough
Ingredients
110 g butter
250 ml of water
*180 g flour
4 eggs
1 pinch of salt
Instructions:
Put the butter in a pot and melt it.
Add water over the melted butter and add a pinch of salt.
Cook until it boils.
Add flour to it
Cook it for 2-3 minutes by mixing continuously (with a wooden spoon with a hole).
During the cooking process, take the pot from the stove and the flour adhered to the pot is scraped. (In this way, the flour will not stick to the bottom of the pot.
Take our dough from the stove and mix and cool occasionally.
Add eggs to the dough one by one and mix continuously (with a wooden spoon with a hole) and add the eggs into the dough.
The dough should be smooth and stretchy when you lift it up with a spoon.
Fill our ready dough into a squeezing bag.
Making Ganache
Ingredients
100 ml heavy cream
200 g chocolate
Some butter
Instructions:
Heat the heavy cream.
Add chocolate.
Mix well and melt the chocolate in cream.
Add butter.
Mix it well
When it gets cold, it is ready to use.
Combining and decorating
Materials
Eclairs dough we prepared
Pastry cream we prepared
The ganache we prepared
Chocolate chips to decorate or any decoration material you prefer
Instructions:
Squeez eclairs dough into long strips on the baking tray. (As in video)
Heat the oven at 190 degrees with the setting of upside-down cooking without the fan.
Place the tray we prepared on the middle shelf of the heated oven.
Cook for 20-25 minutes without opening the oven door.
The tray should not be taken out of the oven immediately after the cooking is finished. It should be taken from the oven by gradually reducing the temperature so that it does not go out.
Cut cooled dough in half as in the video.
Sprinkle the pastry cream between each one.
Cover then the top of the dough that we cut on the cream.
Immerse our eclairs in ganache.
Decorate with the material you desire as you wish.
Serve after resting in the refrigerator for a few hours.
