Thuli is a forgotten traditional Gujarati recipe made from wheat flour and sour buttermilk, once commonly prepared in Gujarati households.
This visrati vangi is simple, nourishing, and extremely comforting — especially when you want something light yet satisfying.
🧾 Ingredients
Coarse wheat flour – 1 cup
Ghee – 3 tbsp (divided)
Cumin seeds – 1 tsp
Hing – a pinch
Green chillies – finely chopped
Ginger – finely chopped
Mixed vegetables
Turmeric powder – ½ tsp
Red chilli powder – to taste
Coriander powder – 1 tsp
Sour buttermilk – 1½ cups
Salt – to taste
Fresh coriander leaves – for garnish
👩🍳 Method
Heat 1 tbsp ghee in a pan and add coarse wheat flour.
Roast on low flame until aromatic and light golden. Keep aside.
In the same pan add remaining ghee, then add cumin seeds.
Add hing, green chillies and ginger. Sauté well.
Add vegetables and sauté until slightly soft.
Add all the spices and mix well.
Pour in sour buttermilk and bring it to a gentle boil.
Now slowly add the roasted wheat flour, mixing continuously to avoid lumps.
Cook on low flame for 5–7 minutes, stirring in between.
Garnish with fresh coriander leaves and ghee.
Serve hot — comforting Gujarati Thuli is ready.
