TOAST WITH ALMOND BUTTER
1. Ingredients
2 slices of sourdough bread - wholemeal
2 tbsp unflavored almond butter
1 tsp Chia seeds
1 pinch cinnamon powder
COUS-COUS SALAD
1. Ingredients:
1⁄2 cup (dry weight) whole wheat couscous
1 cup water
1 small cucumber - peeled and chopped
1⁄3 - 1⁄2 bowl boiled chickpeas OR Green peas (If you have gases or flatulence, kindly use green peas instead of chickpeas)
1⁄2 bowl chopped mixed bell peppers
1 tbsp cold pressed extra virgin olive oil
Herbs - 1 tsp dried basil, 2-3 tbsp fresh coriander leaves, salt and pepper to taste 1 tbsp lemon juice
HUMMUS SANDWICH
1. Ingredients:
2-3 slices of bread
1 large handful of mixed salad leaves or lettuce
2 tbsp hummus
1 grated carrot
1 small cucumber
1/2 avocado
peppers of choice
pitted olives
Seasoning - 1 tsp dried basil, 2-3 tbsp fresh coriander leaves, Salt and pepper to taste , 1 tbsp lemon juice
