NUTTY PANEER BUDDHA BOWL
Learn how to make a delicious Nutty Paneer Buddha Bowl that’s high in protein, packed with flavor, and perfect for a quick lunch or dinner
To make the Stir Fry Vegetables Blanch The Veggies
Carrots 1/4 cup
Beans 1/4 cup
Salt pinch
Water Boil the water,
Add salt then add veggies and cook for 3 to 4 minutes till 80 percent done .
To sauté
Olive oil 2 tsp
Garlic 2 tsp
Blanched veggies
Mixed herbs 2 tsp
Salt 1/2 tsp
To make The Stuffed tomatoes
Boiled Potatoes 2 pcs
Salt 1/2 tsp
Pepper 1/2 tsp
Coriander 1 tbsp
Mash the potatoes, add salt pepper and coriander, Mix Cut the tomatoes in half, deseed them and stuff with potato filling.
To cook the tomatoes
Olive oil 2 tsp
Garlic 1 tbsp
Cheese 2 tbsp
Water 2 tbsp
Add oil to a pan, add garlic and cook the tomatoes on one side, then flip the tomatoes, add cheese to the top side, splash water in the pan and cover and cook for 2 minutes till cheese melts.
To make The Cucumber Raita
Yogurt 1/2 cup
Grated cucumber 1/2 cup
Roasted Coarsely ground peanuts 2 tbsp
Salt 1/2 tsp
Pepper 1/2 tsp
Powder sugar 2 tsp
Coriander 1 tbsp
Whisk yogurt, add all the ingredients and mix.
To make the Nutty paneer skewers To make the green paste
Roasted chana Dal 2 tbsp
Curry leaves few
Garlic 1 tbsp
Green chilli 1
Mint leaves 1/4 cup
Coriander 1/2 cup
Salt 1 tsp
Lemon juice 2 tsp
Blend everything to make a paste
Paneer 200 grams
Walnuts 1/2 cup Cut paneer in long pieces.
Coat it with green paste, then roll them in walnuts. Shallow fry in olive oil, till golden and crispy .
To make the Beetroot Rice
Oil 1 tbsp
Garlic 2 tsp
Urad dal 1 tsp
Boiled carrots 1/4 cup
Grated boiled Beetroot 1/4 cup
Rice 3/4 cup
Salt pinch
Pepper 1/2 tsp
Coriander 1 Tbsp
In a pan, add oil, add urad dal, then add garlic and cook for minute. Then add carrots and Beetroot. Cook for 1 minute, and add rice. Then add salt, pepper and coriander. Toss for 1 minute . Assemble the Buddha bowl, add Chopped onions and Boiled corn.
