This easy vegan keto gluten-free peanut butter mug cake recipe is so peanut buttery, moist and delicious. It is also dairy free, sugar-free, oil-free, low carb, whole food plant based, eggless and the perfect way to quickly satisfy a peanut butter cake craving without any guilt.
You just need 2 tablespoons of (gluten-free) flour, 3 tablespoons of peanut butter, 2 tablespoons of sweetener (I like monk fruit), 2 tablespoons of almond milk, 1/2 teaspoon of baking powder, and a teaspoon of vanilla extract.
Mix all of the ingredients and then microwave your peanut butter mug cake for about 1 minute. Check it with a toothpick and if it doesn't come out clean add about 15 seconds or so. Then enjoy your keto vegan gluten free peanut butter mug cake :)
*Note that I added more peanut butter as my topping but you could choose to add banana slices or chocolate chips as well. I've tried them both and they're both delicious.
