Today's recipe is "Kamo Seiro Soba".
"Kamo Seiro Soba" is a Japanese cold noodle dish with warm Dashi dipping soup containing duck and green onions. The juicy taste of duck and the scent of green onions are a perfect combination.
Today's Japanese ingredient is Dashi. It is the basis of the Japanese traditional food culture "Washoku", and "Umami" of Dashi makes your dishes much more delicious.
[Ingredients (for 2 servings)]
2 bunch Soba
200g Duck meat, sliced
1/2 green onion
200cc Bonito broth
2 tbsp Soy sauce
1 tbsp Mirin (If you do not have Mirin you can add 1 tsp of sugar and 1 tbsp of Sake or white wine .)
1 tbsp Sake (or 1 tbsp white wine)
[Directions]
Put Soba in a plate and pour enough water to cover the noodles. Let it soak for 10 minutes.
Cut green onion into 2 cm lengths.
Roast both sides of duck in a frying pan without cooking oil.
Add green onion and roast.
Move the duck meat to another plate.
When the green onion is brown, move it to another plate.
Add bonito broth, soy sauce, mirin and sake to the fraying pan to make dipping soup.
Warm the soup and add the roasted duck and green onion.
Boil Soba in parallel with making soup.
Boil Soba in boiling water for 3 minutes.
Place in a colander, rinse with cold water and drain.
Pour the hot soup in a small bowl and serve with boiled Soba.
Ready to eat!

Tip 1 – Roast the green onions rather than boil directly to enhance the aroma and flavor.
Tip 2 – If you soak the dried Soba in water for 10 minutes before boiling, it will taste like handmade soba.
