Full Recipe
Bigne is a classic italian dessert, so creamy and soft, it’s all the best things combined into 1. You can alternate the filling to anything you desire, I chose the classic pastry cream and the chocolate version one.
Ingredients:
For the pastry:
1/3 cup water
1/3 cup milk
1 tbsp sugar
1/8 tsp salt
7 tbsp unsalted butter
1 cup of cake flour
5 eggs
For the filling:
pastry cream (link to previous video for full recipe)
1 TBSP cocoa powder
For decoration:
2 TBSP melted dark chocolate
1 TBSP powdered sugar
Steps:
In a small saucepan, on medium heat, add the water, milk, sugar, salt and butter and stir until the butter is completely melted and it starts boiling.
Once boiling lower the heat, add the cake flour and constantly stir until fully combined and it starts to form a crust at the bottom of the pan, this is how you know its ready.
Transfer it to a bowl to cool.
Turn on the oven at 400’
Start by adding the eggs, one at a time, mixing until fully combined. You will see how the consistency changes.
Once creamy, transfer it to a piping bag.
Pipe them leaving a some space between them for when they expand
Using a wet finger, squish the tip down and shape them as needed.
Put them in the oven for 15 minutes.
While in the oven, take half of the pastry cream and add the cocoa powder and mix until creamy.
Lower the temperature to 360’ and bake for another 15min with the oven door open using a wooden spoon to allow the steam to cook them.
Take them out of the oven and let them cool for 10min before filling them
Fill half of them with cream, and the other half with chocolate cream. I like to dip the chocolate ones in the dark chocolate and sprinkle the vanilla ones with powdered sugar to differentiate them.
