When harvesting peanuts, timing and technique are crucial for maximum yield and quality. Wait until the plants begin to yellow and the leaves start to dry, typically 120-160 days after planting, depending on the variety. Gently loosen the soil around the base of the plant with a garden fork, then carefully lift the entire plant from the ground to avoid breaking the pods.
Shake off excess soil and lay the plants in a warm, well-ventilated area to dry for 2-3 weeks, turning them occasionally to ensure even curing. Once the leaves are crisp and the shells harden, remove the peanuts by pulling them from the vines.
Store cured peanuts in a cool, dry place in mesh bags or breathable containers for up to 6 months. For long-term storage, shell the peanuts and keep them in airtight containers in the fridge or freezer to prevent mold and preserve freshness.
