Jaggery is a traditional non centrifugal cane sugar consumed in some countries in Asia and America. It is a concentrated product of cane juice. It can vary from golden brown to dark brown in colour. It contains 50% sucrose and 20% invert sugarand upto 20% moisture with the reminder made up of other insoluble matter. Jaggery is often used as a replacement to sugar. Jaggery is also consumed for it supposed digestive and other benefits although its research is yet to bear that out! Jaggery is mad of cane sugar and the toddy palm tree. We prepare a lot of sweets and also poli and burfi etc using jaggery. Today i would like to put up my version of jaggery coconut wheat atta burfi!
INGREDIENTS:
1. Fresh grated coconut - 3/4 cup
2. Chopped jaggery - 3/4 cup
3. Wheat atta - 1/4 cup
4. Pure ghee - 2 tbsp
5. Cashew powder - 1/4 cup
6. Cardamom powder - 1 tsp
PROCEDURE: Add grated coconut and chopped jaggery to mixie bowl and grind it fine and keep it aside. Add 1 tsp ghee to pan and on melting , add 1/4 cup wheat atta and fry it on low flame till aromatic and transfer it to another bowl. In the same pan add the coconut-jaggery mix and add 1 tsp ghee and keep cooking and the jaggery melts and it combines for about 5 minutes on low flame. It will start to thicken and then add cashew powder 2 -3 tsp to it and keep stirring well. After a while add fried wheat atta and fry stir till combined and when the mixture leaves the sides of the pan to form thick dough like the chapati mix. Transfer it to a wooden plank and mark as needed to cut immediately into required shape. Enjoy!
