Layered desserts have a way of making seemingly simple elements come together in vibrant and appetizing combinations. Neatly stacked with different hues and textures, they are a joy for all senses. This dessert combines Eggless Mango Mousse, Eggless Coconut Custard and Fresh Mangoes, with none overpowering the other's flavour. Perfectly sweet and fresh! None of the elements are difficult to make - they just need some patience.
Some important points to note starting with the whipping cream - ensure that the cream, bowl and whisk attachments are chilled before whisking. Keep them in the refrigerator for 30 minutes. This helps the cream whip up easily and gives better texture. You could use a hand whisk but that demands significant strength and time. I find it easier to use an electric whisk. Start by whipping slowly until soft peaks form. Soft peaks do not hold their structure well and appear like conical mounds when the whisk is lifted. Once done, switch to high speed and whisk for a few seconds at a time. What we want are medium peaks - their tips curl when the whisk is lifted but they maintain their form otherwise. This is perfect for mousse! Start by folding a little into mango pulp. You can mix a little vigorously the first time. For remaining folds, be very gentle with the whipped cream else you may knock out all the air that we whisked into it. The eggless coconut custard is quite simple. Just remember to cook it by setting heat level to medium low or less. For perfect layers, it's important to let the dessert cool after adding each layer. Be patient and you will be rewarded in the end.
INGREDIENTS
Mango Mousse
½ cup or 120 grams cold whipping cream
75 grams mango pulp sieved
1 tablespoon icing sugar (optional; sieve and add to whipping cream before whisking)
4-5 drops of yellow colour
Coconut Custard
1.25 cup or 300 grams thick coconut milk
Corn flour slurry: 2 tsp corn flour + 2 tsp water
2 tbsp sugar
2 drop vanilla essence
Fresh mango balls (could be substituted with fresh mango cubes)
