This is a very delicious and easy recipe for a pumpkin cream cheese cake
Ingredients for 9-10 inch or 24-26cm Bundt pan:
1 cup butter at room temperature (226 g)
1 and 1/4 cup granulated sugar (250 g)
3 large eggs
400 g pumpkin puree (1 and 1/3 cup)
1 teaspoon vanilla
3 cups all-purpose flour (375 g)
2 teaspoon baking powder
1 teaspoon baking soda
3 teaspoon cinnamon
1 and 1/2 teaspoon ground cloves
1 teaspoon nutmeg
3/4 teaspoon salt
3/4 cup buttermilk
For cream cheese filling:
2 and 1/2 cup cream cheese at room temperature (300 g)
1 tablespoon sour cream or Greek yogurt
1/4 cup sugar (50 g) 1 egg
1 teaspoon vanilla
1/2 teaspoon cornstarch
Brown sugar glaze:
2 tablespoon butter
1/4 cup dark brown sugar
2 tablespoon milk
2/3 cup icing sugar
1/4 cup chopped walnuts/pecan
Tips: To make a pumpkin puree follow the video instructions and strain the pumpkin really well to get rid of any excess water or you can use pumpkin puree can. You can also use butternut squash instead of pumpkin.
