sundried tomato hummus, med veg & tempeh sandwhich 🥪🫶🏽
recipe - makes 1
for the hummus: 🍅( this makes a batch)
400g chickpeas with 1/2 of the juice
1 clove of garlic
1 tbsp of tahini a drizzle of olive oil
150g sundried tomatoes
1 lemon (juiced)
2 ice cubes a pinch of salt
2 pieces of sourdough I used
1/2 a red pepper
1/2 a courgette
1/2 a block of tempeh (100g)
a handful of fresh basil
1 tsp paprika
1 tsp cayenne pepper
olive oil
salt & black pepper
method:
cut your veggies into slices, place in a baking dish and cover with olive oil, salt & pepper. bake in the oven at 180°C for 20 minutes. meanwhile slice your tempeh into 2 or 3 thin slices and fry in some olive oil, the paprika, cayenne pepper salt and pepper for a few minutes on each side until golden brown.
to make the hummus simply but everything into blender and blitz. toast your bread and once the veggies are done layer up your sandwich with hummus on both slices of the bread, then the veg, tempeh and some fresh basil. enjoy 🥪🫶🏽
