🐟 Kerala Fish Fry – Traditional & Flavorful
Ingredients:
Fresh fish slices – 4 to 5 pieces
Coconut oil – 2 tbsp (for marination) + more for shallow frying
Shallots – 2 tbsp, finely chopped
Green chilies – 2, finely chopped
Curry leaves – 1 sprig, chopped
Turmeric powder – ½ tsp
Coriander powder – ½ tsp
Salt – to taste
Lemon juice – 1 to 2 tsp (freshly squeezed)
Method:
1. In a bowl, mix turmeric powder, coriander powder, salt, shallots, green chilies, curry leaves, lemon juice, and coconut oil to make a flavorful marinade.
2. Coat the fish slices well and let them marinate for at least 2 hours.
3. Heat coconut oil in a pan and shallow fry the fish on low flame.
4. Flip gently and slow cook until crispy outside and juicy inside.
5. Serve hot – optionally squeeze more lemon juice just before serving.

🍅 Kerala Rasam – Simple, Comforting & Aromatic
Ingredients:
Tamarind – lemon-sized
Tomato – 1, chopped
Garlic – 5 cloves, crushed
Green chili – 1
Curry leaves – 1 sprig
Mustard seeds – ½ tsp
Dried red chilies – 2
Rasam powder – 1 tsp
Asafoetida (hing) – 1 generous pinch
Water – 2 cups
Salt – to taste
Coriander leaves – to garnish
Coconut oil – 1 tsp
Method:
1. Soak tamarind in warm water and extract the juice.
2. In a pot, add tamarind water, tomato, garlic, green chili, salt, and rasam powder. Simmer until tomatoes soften.
3. Heat coconut oil in a small pan. Add mustard seeds and let them splutter.
4. Add red chilies, curry leaves, and asafoetida. Sauté for a few seconds.
5. Pour this tempering into the rasam and mix well.
6. Garnish with coriander leaves. Serve hot.

Eggs – 2
