Ingredients:
1 Egg
Minced pork
Sliced shallots & chopped green onions
Seasoning: Fish sauce, soy sauce, pepper
Cooking Oil: 5 spoons of Rice bran oil
Instructions:
Whisk: Combine egg, pork, veggies, and seasonings. Beat until well mixed.
Fry (Batch 1): Pour half the mixture into hot oil. Fry until golden brown on both sides. Drain and plate.
Fry (Batch 2): Repeat with the remaining mixture.
🔥 2. Holy Basil Pork (Pad Kra Pao Moo)
The legendary spicy Thai basil stir-fry.
Ingredients:
Minced pork
The Paste: Garlic, bird’s eye chilies, and ginger (crushed together)
Herbs: Holy basil leaves, shredded kaffir lime leaves
Seasoning: Palm sugar (1 knob), fish sauce (2 spoons), dark soy sauce (for color)
A splash of water
Instructions:
Sauté Aromatics: Fry the chili-garlic-ginger paste until fragrant (watch out for the spicy fumes!).
Sear Pork: Add pork and dark soy sauce. Stir-fry until the meat is cooked.
Season: Add kaffir lime leaves, palm sugar, and fish sauce. Mix until the sugar melts.
The Finish: Toss in holy basil and a splash of water. Stir quickly until the leaves wilt and the pork is glossy. Serve over hot rice.

Palm Sugar: Using real palm sugar gives the dish a mellow sweetness that white sugar can't match.
