Dolly Paton's Butterscotch Pie
Ingredients
For the crust:
1 3/4 cup pecans
3 Tbsp brown sugar
3 Tbsp butter
pinch of salt
For the butterscotch filling:
1 cup brown sugar
2 Tbsp flour
2 Tbsp corn starch
1/4 tsp salt
2 Tbsp melted butter
2 egg yolks
3/4 cup sweetened condensed milk
1 tsp vanilla extract
Instructions
To make the crust: Combine the pecans, butter, sugar, and salt in a food processor and blend. Transfer the mixture to a greased pie pan and press firmly in the bottom and up the sides. Bake in a 375 degree oven for 10 to 15 minutes.
To make to filling: Combine the brown sugar, cornstarch, flour, butter, and salt in the top of a double boiler over medium heat and stir to combine. Add egg yolks and continue to stir until incorporated. Gradually add the milk, stirring constantly until the mixture thickly coats the back of a spoon and is smooth. Stir in vanilla and pour the mixture into the pie crust. Turn oven down to 300 degrees and bake for 15 minutes, until the filling is firm. Let cool and serve with whipped cream.
