Here is the recipe:
Adam's Crusty Cheese Puffs Recipe
Ingredients
150g full cream milk (I used UHT)
50g sunflower oil
1 egg (60g weight with shell)
4g salt
30g spring onions cut into small bits
170g tapioca flour* (in a plastic bag to facilitate pouring through the MC hole)
180g cheddar cheese or any other hard cheese, grated
Preparation
1. Preheat oven to 200deg fan, middle rack.
2. Grease a 24-hole mini-muffin pan.
3. Add milk, oil, egg, salt, spring onion into mixing bowl.
4. On Home page, set to 45sec Sp 3, for mixing. Immediately take out MC and pour the tapioca flour into the mixing bowl (from the plastic) in a steady flow, while the blade is mixing. Then cover with MC and immediately turn up the speed to Sp7 (to mix for at least the last 5-10sec).
5. Pour batter out into the greased pan equally into the 24 holes, it should be almost full for each hole.
6. Sprinkle cheddar cheese on top the batter, spreading equally between the 24 holes.
7. Bake for 15-20 mins, until golden brown.
Remove from the pan and cool the puffs on the cooling rack. Serve.
