Koupepia
Hello :) today I’m going to show you the Cypriot version for dolmades, they are called koupepia.
This is my yiayia’s recipe, most Cypriot koupepia have the same ingredients though. I have changed one thing, and added pine nuts, I love the texture they give. So even though they aren’t a traditional ingredient I really think they work.
I’m using long grain rice because it’s how we have always done it, some people think you should only use risotto rice, but I find it makes the dish heavier and I don’t want that. Some people also pre cook the filling but that isn’t how we do it, and I think it works better this way.

Makes about 50
Ingredients:
1 jar of vine leaves
500g pork mince
100g long grain rice
1 onion
Small bunch of parsley
1 tsp salt, pepper, cinnamon and dried mint
100g pine nuts (optional)
200g tomato passata
Juice of half a lemon
3 tbsp extra virgin olive oil
For the liquid:
200g tomato passata
1.5 cups water
1 chicken stock cube
