Why has my chocolate turned white? Is it safe to eat? Is it mold? This is one of the most commonly asked questions I have received.
White chocolate is likely safe to eat. Most often the chocolate has been subject to intense heat or sun, causing the exposed sides to melt and re solidify.
As the chocolate solidifies, the fat (aka cocoa butter) is pulled out of solution and settles in a different way than it did when being made.
Chocolate that has turned white can have white streaks, it can be fully white, and more often than not will melt in your hand when you hold it.
The good news is you can eat it as is, and you can also fix it.
