Paneer Stuffed Capsicum Recipe:
Stuffing:
Ginger (finely chopped) - 1 tsp
Garlic (finely chopped) - 1 tbsp
Green Chilli (finely chopped) - 1 tbsp
Onion (finely chopped) - ½ Cup
Cashew (half) - 15 nos
Red Chilli Powder - ½ tsp
Coriander Powder - ½ tsp
Garam Masala Powder - ½ tsp
Turmeric Powder - ¼ tsp
Salt - ¼ tsp
Chaat Masala - ½ tsp
Tomato Ketchup - 1 tbsp
Paneer (grated) - 100 grams
Potato (boiled) - 2 nos
Coriander Leaves (finely chopped) - 3 tbsp
Lemon Juice - 2 tbsp
Other Ingredients:
Capsicum - 3 nos
Oil - 1 tbsp + 1 tsp
Grated Cheese - 1 Cup
Red Chilli Flakes - 1 tsp (for garnish)
Cooking Instructions:
1. Cut the capsicum in half and remove the seeds.
2. Heat oil in a pan and add the capsicum. Toss on high heat for 2-3 minutes. Remove from the pan.
3. Meanwhile, prepare the mixture. In the same pan, add the ginger, garlic, and green chilli. Saute lightly and then add the onion and cashew. Saute until translucent.
4. Add all the powdered spices, salt, and tomato ketchup. Mix well for 2 minutes.
5. Add paneer, potato, coriander leaves, and lemon juice. Mix and remove from the heat.
6. Fill the capsicum with the stuffing. Press it down tightly.
7. Grease a pan with oil, and add the stuffed capsicum, stuffing side down. Cook for 2 minutes on low heat.
8. Flip it carefully, cover, and cook for 10-12 minutes on low heat. Move it around occasionally to ensure it does not burn on the bottom. Cook on very low heat only.
9. Add grated cheese on top of each piece, cover, and cook for 5 minutes or until the cheese melts.
10. Serve this as a starter or a party snack, garnished with coriander leaves and chilli flakes.
Cooking Tips:
1. Use firm and smaller-sized capsicum for this recipe.
2. You can use any type of cheese for this recipe.
