Chicken Khada Masala | Whole Spices Chicken Recipe
INGREDIENTS:-
Chicken Marination:
Chicken(with bones)-750 Grams
Salt-1 Tsp
Lime Juice-Half Lime
For Cooking:
Oil-1/4 Cup
Cardamoms-1 Black & 5 Green
Black Peppercorns-1 Tsp
Cinnamon Stick-2 Inches
Cloves-5
Cumin Seeds-1 Tsp
Onion(Sliced)-3 Medium
Ginger Garlic Paste-2 Tbsp
Coriander Seeds(Crushed)-2 Tsp
Dried Red Chillies(Chopped)-5 Medium
Yoghurt(Whisked)-1 Cup
Fried Chicken
Water-1/2 Cup
Green Chillies(Chopped)-3 Medium
Fresh Coriander(Chopped)-3-4 Tbsp

INSTRUCTIONS:-
1-Marinate the Chicken:
•In a large bowl, add chicken pieces. Coat with lime juice and salt. Marinate for 30 minutes.
2-Cooking the Chicken:
•Heat oil in a large pan or kadhai over medium heat.
•Add the chicken and fry for 3-4 minutes on each side. When done take out the chicken and set aside.
•Add Whole Spices- cardamoms, black peppercorns, cinnamon stick, cloves & cumin seeds. Sauté for a minute until the spices release their aroma.
•Add the sliced onions to the pan and cook until they turn golden brown.
•Add the ginger-garlic paste and cook for another 2 minutes.
•Add Coriander seeds and red chillies, sauté for a minute.
•Add Yoghurt and salt, cook until it releases oil.
•Add the fried chicken to the pan and mix well with the masala.
•Add Water, Cover and cook on medium heat for about 15-20 minutes, stirring occasionally, until the chicken is cooked through.
3-Garnish and Serve:
•Garnish with green chillies and fresh coriander leaves.
•Serve hot with rice, naan, or roti.
