Sofiyana Biryani Recipe:
Cinnamon - 1 Inch + 1 Inch
Cardamom - 5 nos + 4 nos
Clove - 5 nos + 4 nos
Ghee - 2 tbsp
Chicken - 1 kg
Onion (sliced) - 2 nos
Green Chilli (slit) - 3 nos
Ginger Garlic Paste - 1 tsp + 1 ½ tbsp
Salt - 2 tsp + ½ tbsp
Cashew Nuts - 10 nos
Almonds - 10 nos
Khoya (grated) - ¼ Cup
Water - ¼ Cup + As Needed
Milk - ¼ Cup
Curd (whisked) - 1 Cup
Garam Masala - ½ tsp
Basmati Rice - 1 ½ Cups
Lemon - 2 tsp + 2 tsp
Rose Water - 1 tbsp
Kewra Water - 1 tbsp
Fresh Cream - 2 tbsp
Saffron - A Few Strands
Cooking Instructions:
1. Wash and soak the basmati rice for 20 mins.
2. Blend the soaked nuts with water to make a smooth paste.
3. Bring water to a boil in a pot, add salt and whole spices. Add some ginger garlic paste and a squeeze of lemon.
4. Add the rice and cook until 75% done, add milk with the rice.
5. Strain the rice and set it aside.
6. For the chicken, in a pot, take the ghee, chicken, ginger garlic paste, nut paste, khoya, onions, curd, green chillies, lemon, salt, spices. Mix it well.
7. Turn on the stove and bring the mixture to a boil and then allow it to simmer for 10 mins, covered.
8. Open the pot, add garam masala and add the cooked rice on top.
9. Add the rose water, kewra water, fresh cream, and saffron strands.
10. Cover and simmer for 20-22 mins on a low flame.
Cooking Tips:
1. This biryani variant is very flavourful yet mild, add more green chillies for added spice.
