If you have chickens, and you don't want to feed old birds 70 lbs of food a year for very few eggs, you have stewing hens. But how do you process these birds for the best storage, flavor and texture? This is what we do.
FINAL COUNT:
13 hens, 3 roosters, 3 ducks, 3 turkeys =
Canned:
7 pints chicken teriyaki
2 quarts chicken curry
3 quarts chicken stew
3 quarts chicken soup
3 quarts chicken stock
Frozen:
1 pack frozen duck breasts for salads later
3 whole frozen roosters
9 lbs ground turkey (breast/thighs from 2 birds)
6 turkey legs frozen for turkey carnitas later
Fresh eating:
1 turkey breast/thighs smoked for sandwiches
1 large batch of chicken soup for a friend
1 batch chicken/duck & dumplings for dinner
And a whole lot fewer mouths to feed through
the winter
Pressure canning chicken, 10 lbs of pressure (under 1,000 ft), 90 minutes for quarts, 75 minutes for pints.
Pressure canning chicken stock, 10 lbs of pressure (under 1,000 ft), 25 minutes for quarts, 20 minutes for pints.
I highly recommend you consult the National Center for Home Food Preservation or buy a Ball canning book for safe guidelines to pressure canning.
