Siopao is traditionally Chinese bun and literally means hot bun.
It is a popular snack sold mostly by bakeries and vendors and in many Chinese restaurants and eateries in the Philippines. There are different varieties based on the filling: pork asado or bola-bola (a combination of pork, chicken, beef, shrimp or salted duck egg). There is also a baked variety.
An old urban legend or canard alleges that siopao is made from cat meat, due to the relative cheapness of siopao and anti-Chinese prejudice.
Siopao recipe
Bread flour -350g
Corn starch-50g
Salt - 4g
Sugar- 80g
Baking powder- 8g
Yeast -8g
Vegetable oil-40ml ( can be replaced by shortening)
Bread improver- 3g(optional)
Fresh milk - 200ml
10ml - vinegar ( to make the dough whiter)
Note: bread flour and cornstarch can be substituted with 300g all purpose flour ( bleached) and 100g cake flour ( bleached ) .
Filling
Ground pork- 500g
Onion - 20g
Garlic - 15g
Water - 250ml
Corn starch- 16g
Oyster sauce - 10ml
Soy sauce- 30ml
Sugar - 15g
Star anise-1/2 tsp
Salt and pepper
Sauce
Water - 250ml ( much better if pork broth )
Oysters sauce - 15ml
Soy sauce-15ml
Star anise - 1 whole
Onion- half (small size)
Garlic - 1 clove
Sugar - 15g
Vinegar-1tsp
Salt and pepper
Siopao recipe( tbsp and cups conversion)
Bread flour -2 1/2 cups
Corn starch-6 1/2 tbsp
Sugar- 3/8 cup
Baking powder- 1 tbsp
Salt - 1tsp
Yeast -1tbsp
Vegetable oil-3tbsp ( shortening)
Bread improver- 1 tsp (optional)
Fresh milk - 3/4 cup and 2tbsp
3/4tbsp - vinegar
Note: bread flour and cornstarch can be substituted with 2 3/4cups of all purpose flour ( bleached) and 7/8 cup of cake flour ( bleached ) .
Filling
Ground pork- 500g
Onion - 1/2 pc
Garlic - 2cloves
Water -1 cup
Corn starch- 2tbsp
Oyster sauce - 1 tbsp
Soy sauce- 3 tbsp
Sugar - 1 1/2tbsp
Star anise (1 whole )
Salt and pepper
Sauce
Water - 1 cup ( much better if pork broth)
