Paska is a traditional Easter bread particularly spread in Central and Eastern European countries.
Here's the recipe:
This is Mom T's recipe and it's so good! This makes 4 loaves so halve it if you only want 2.
Ingredients:
1 1/2 tablespoons yeast
1 cup sugar (we only used 3/4 cup)
1 1/4 cup warm water
Flour
2 teaspoon salt
3/4 cup butter
4 whole eggs
3 egg yolks
1 tablespoon vanilla
1 tablespoon lemon juice
Let yeast soften in warm water. Separate eggs and beat till egg whites are stiff. Melt butter. Mix all ingredients. Slowly start adding flour to make a soft dough. Cover. Let rise, be patient, it may take up to 2 hours. Put it in oven with just the light on for more warmth. Shape into 4 loaves and allow to rise again till double in bulk. Bake at 350 for 40 minutes. Serve with butter, icing and sprinkles.
Hot Cross Buns – 1 Dozen
⅝ cup warm water (that's ½ cup + 2 tbsp, or about 150 ml)
⅜ cup warm milk (just over 1/3 cup)
½ tbsp yeast
3 tbsp sugar
½ cup warm mashed potatoes
3½ cups flour (start with 3 cups and add more if needed)
¾ tsp salt
5 tbsp margarine, melted (¼ cup + 1 tbsp)
1 tsp cinnamon
½ tsp allspice
½ to ¾ cup raisins, depending on your preference
Instructions
Soften yeast in warm water for 5 minutes.
Add all other ingredients and mix, gradually adding flour until dough is soft but kneadable.
Let rise until doubled.
Shape into 12 buns, place on a baking sheet, and cut a cross into each.
Let rise again.
Bake at 350°F for 15 minutes or until golden.
