Ingredients:
1 lb Red Delicious apples (500g)
1 tsp ground cinnamon
3 tbsp granulated sugar (30g)
1 tbsp vanilla sugar
2 oz walnuts, ground (50g)
3 cups flour (300g)
4 oz butter (100g)
2 oz granulated sugar (60g)
1 tsp baking powder
2 tbsp sour cream (30g)
2 egg yolks
Sauce:
4 oz granulated sugar (100g)
5 oz heavy cream (150g)
Instructions:
Preheat the oven to 350°F.
Peel the apples. Use a melon baller to scoop out the inner core and seeds from the apples.
Cut into slices and place into a large bowl.
Add ground cinnamon, both granulated and vanilla sugar as well as ground walnuts and stir.
In other large bowl, place flour, butter, sugar, baking powder, sour cream and egg yolks. Beat until well mixed. Reserve a part of (100g) the dough for the top of the pie.
Grease and flour the pan. Place the dough into the pan and evenly press to form a crust.
Arrange the apple slices on the crust in a circular pattern.
Crumble the reserved dough over the top.
Bake for 30 minutes.
For the sauce, melt the sugar in a saucepan until caramelized. Add the heavy cream and simmer for 15 minutes.
Pour the sauce over the pie to serve.
