Cassava leaves are high in important nutrients that the body craves. I prepare them beforehand for use in my omelettes, sautès and stews. Simply wash them, lay them neatly, roll tgem up then finely chop.
Remember to use the leaves from the butter or sweet cassava varieties and not the bitter variety. The latter is said to be poisonous.
