Muscadine Jelly

5 Pounds Muscadine Grapes
Water - enough to cover the grapes muscadines
Bring to a boil and start smashing with a potato masher. Boil on medium high while you keep on smashing for 15 minutes. Strain the pulp, hulls and seeds with a fine mesh strainer or cheese cloth and measure out 5 cups of the juice.
Making The Jelly
5 cups Muscadine Juice
6 cups granulated sugar
1 box Sure Jell (1.75oz package)
1 teaspoon butter
Bring juice to a full rolling boil for 5 minutes (stir often). Reduce heat to the point you can stir the boil down. Add Pectin, increase heat to a rolling boil and stir for 1 minute. Add pat of butter if you have foaming. After 1 minute add the sugar. This will cool off the mixture so bring back to a boil for another minute. You should be able to run a finger down the spoon you were using and the jelly will not fill in your finger swipe.
Waterbath can for 10 minutes for pints or less.
