This roast turned out really good. I was experimenting with some curing salt to make a "fake" smoke ring and add some flavor to the meat. I think I left it on too long before rinsing it off, but it didn't hurt the flavor or the cook. This roast tasted just like my smoked baby back ribs, so no complaints. I sliced this, but it could've just as easily been shredded to make pulled pork.
