Benefits of Spinach Soup
Spinach is an extremely nutrient-rich vegetable. It contains a high amount of carotenoids, vitamin C, vitamin K, folic acid, iron, and calcium.
It’s good to aim of at least a cup of fresh or boiled spinach each day to fight the age-related issue.
Like many leafy green vegetables, spinach is loaded with antioxidants, which are important for skin cell development.
Spinach soup ingredients:
Prep Time: 3 minute
Cook Time: 8 minute
Total Serving:2 people
Serving size: 2 cups
5-6 cups Spinach
½ cup chopped Tomatoes
½ cup chopped Onions
4-5 Cloves of Garlic chopped
2 tablespoon Olive Oil
Salt and Black pepper to taste
3 cups of water
Directions:
Heat 1 tablespoon of Olive Oil in a Soup.
Add the spinach garlic and tomatoes stirring constantly until the spinach is wilted 2-3 minutes.
Add the mixture to a blender or food processor.
Pour in 1 cup of water to the mixture pulse until pureed – set aside.
In a soup pot cook the onions in olive oil over medium heat until they begin to soften.
Add pureed spinach mix, and water.
Bring to a boil until desired thickness.
Add salt and pepper as per your taste.
Enjoy warm soup with some papadam or Sweet potato Crips
