• Pork back fat “snow” + freshly brewed dried-fish (niboshi) stock
• Thin-sliced rolled pork belly (melt-in-your-mouth, not thick Jiro-style)

• Why this style was born: factory workers in snowy Niigata added extra fat so delivery ramen stayed hot
