Ingredients:
For Stuffing
------------------
. 1/2 cup suji (semolina)
.1/2 cup grated fresh coconut
.1/2 cup sugar (as per taste)
. 1/2 cup Milk
. 1/2 tsp nutmeg and cardamom
powder
. 1 tbsp clarified butter
.1/2 tbsp charoli
(or cashew or almonds)
For cover
----------------
. 1 &1/2 cup all purpose flour
(maida)
. 1/2 cup wheat flour
. 2 tbsp hot clarified butter
. pinch of salt
. oil / ghee
(for frying)
Method:
. Dry roast suji properly
on low flame
(approximately
10 -11 minutes)
then keep aside.
. Heat 1 tbsp clarified
butter in pan.
. Add charoli,coconut
and mix it properly.
. Add milk and sugar
and stir it properly
still sugar melted
properly.
. When sugar melted
properly and mixture
strarted boiling,add
roasted suji and saute
it.
(keep flame low)
.when mixture becomes
thick as shown in video,
switch off flame.
. Add nutmeg and cardamom
powder and mix it.
. Cover it partly with lid and
allow to rest for 4 - 5 hour
or overnight so
that suji sokes moisture
and becomes soft.
. After over night or 5 hours
stuffing is ready.
. Break lumps with spoon
and make it even.
. Transfer all purpose flour,
wheat flour in big bowl
or plate.
. Add salt and hot ghee
in it.
. Mix it properly .
. Add required water
and prepare little
hard dough.
. Cover the dough
and allow to rest it
for 10 -15 minutes.
. After that again knead
the dough properly.
. Take some portion
of dough and roll
it little thicker than
regular chapati.
. Cut it in circular
shapes with the help
of sharp edge bowl.
. Take one circular
shape (cover) and
make small folds
on the edge as shown
in video.
. Fill the stuffing and
close it carefully
and gently.
.Modak is ready,
prepare all modak
in same way.
. Deep fry modaks
in medium hot oil
on low - medium
flame,till becomes
light brown and crispy.
. Transfer fried modak
on kitchen paper.
. Suji coconut fried
modaks are ready.
. Allow to cool at
room temperature
then store in dry
airtight container
for 4 - 5 days.
. Enjoy.
