Tag us when you bake, and let’s see your creations! Peach Upside Down Cake Recipe Ingredients: Nonstick cooking spray, for greasing
2-3 peaches, pitted and cut into wedges
1 3/4 cups granulated sugar, divided
1/2 cup light brown sugar
1/2 cup olive oil
1/2 cup (1 stick) unsalted butter, melted
2 large eggs
3/4 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups all-purpose flour
2 teaspoons kosher salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Directions: Preheat oven to 350°F. Grease a 9-inch cake pan with cooking spray and line the bottom with parchment paper. Arrange peach wedges in concentric circles at the bottom.
In a medium saucepan, combine ¾ cup sugar and 2 tbsp water over medium-high heat. Cook, shaking occasionally, until an amber caramel forms (about 6 minutes). Pour caramel evenly over peaches.
In a large bowl, whisk remaining sugar, brown sugar, olive oil, butter, and eggs until smooth. Add buttermilk, vanilla, and almond extract, whisking until combined.
Add flour, salt, baking soda, and baking powder, folding until just combined. Pour batter over peaches and caramel.
Bake for about 1 hour, until golden and a toothpick inserted in the center comes out clean. Cool for 15 minutes, run a knife around edges, and invert onto a plate.
