Embark on a journey into the enchanting tradition of "legen," an inheritance of sweetness rooted in the Javanese word "lêgi," meaning sweet. Legen, predominantly crafted from the blossoms of the female siwalan palm tree, tells a tale of the intricate artistry of tapping the slender flower spikes. These spikes are delicately sliced to extract the latex, collected in bamboo tubes known as "bumbung." The overnight tapping process culminates with the bamboo tubes being placed as receptacles in the evening, ready to be full by the morning.
In a bid to counteract acidity, a sprinkle of lime water is often dusted on the base of the bamboo tubes. The legen water, known as "nila" in Bahasa Indonesia, adds a special touch to the flavor of legen. While nila can also be derived from coconut or aren palms, legen is exclusively crafted from the siwalan palm. There are two types of siwalan palms; one produces coconut-like blossoms and yields the fruit known as siwalan, while the other exclusively flowers in slender spikes, harvested for its latex to make legen.
