Welcome to my channel. My name is Will and today I'm giving scotch pies a go. check out the recipe below with step by step instructions to make at home yourself.
Traditional Scotch Pie Recipe
Ingredients
For the Filling:
1 lb (450g) minced lamb (mutton if available, or beef as a substitute)
8 oz (225g) crushed rusks or fine breadcrumbs
½ tsp salt
½ tsp white pepper
½ tsp ground mace
½ tsp ground nutmeg
1–2 tbsp water or gravy (optional)
For the Hot Water Pastry:
8 oz (225g) lard or beef dripping
1 ½ lb (675g) self-raising flour
1 tsp salt
10 fl oz (300ml) water
Milk for glazing
Equipment:
A jar or tumbler for shaping pies
Method
Making the Pastry:
In a saucepan, bring the water to a boil and melt the lard in it.
Sieve the flour and salt into a bowl that has been warmed slightly—this prevents the hot fat from cooling too quickly.
Make a well in the flour and pour in the hot fat and water mixture. Stir with a wooden spoon until combined.
Once cool enough to handle, knead the dough until it becomes elastic. Cover and leave in a warm place until it firms up but remains pliable.
Shaping the Pies:
Roll out the pastry to about ⅛ inch (3mm) thick.
Cut out circles large enough to fit your moulds—this should make around 15 pies.
Cut additional circles for the pie lids.
Preparing the Filling:
Mix the minced meat with the crushed rusks or breadcrumbs.
Add a small amount of water or gravy (about ½–1 tsp at a time) until the mixture feels moist but not wet.
Season with salt, white pepper, mace, and nutmeg. Mix thoroughly with your hands.
Assembling the Pies:
Press the pastry rounds into the moulds and fill them about ¾ full with the meat mixture.
Place the lids on top, pinch the edges lightly but firmly to seal.
Make small slits in the top using a knife (a gentle stab and twist method works best).
Brush the tops with milk and sprinkle lightly with salt.
Baking:
Preheat the oven to 220–230°C (425–450°F).
Bake for 25 minutes, or until golden brown.
